Hay Camp Brewing Company

Hay Camp Brewing Company has been part of Rapid City’s craft beer scene since 2012. Its name comes from the hay meadows east of the Gap, where freight bull trains stopped for water and feed before Rapid City was platted. Owner and brewmaster Karl Koth, a former USGS geophysicist and South Dakota Mines graduate, opened the first brewery with partners in a garage at the Fairmont Creamery building, with a one-barrel system and about 30 seats. In 2017 Hay Camp moved into a 1948 art-deco former Oldsmobile and Cadillac dealership downtown. Its bar and beams are framed in Kauri wood once imported for the Homestake Mine. The building holds a taproom, the Bashful Bison deli and a 3,000-square-foot event hall. Hay Camp brews on a seven-barrel steam-fired system and self-distributes. It keeps eight core beers on tap and rotates sours, stouts and seasonals.
